Why charcoal changes the grill section

Charcoal gives dry, radiant heat. It sears a marinated skewer fast, and the fat dripping onto the coals comes back as smoke. That is what separates our tandoor and barbecue plates from the same dishes cooked on a gas surface. The rest of the kitchen — gravies, noodles, breads — is cooked conventionally, as it should be.

Fried rice, noodles and gravies

Away from the coals, the menu covers veg, paneer, mushroom, egg and chicken fried rice and noodles, plus a full main-course section — paneer butter masala, palak paneer, kadai vegetable and gobi manchurian on the vegetarian side; chicken butter masala, kadai chicken, mutton rogan josh and mutton pepper masala on the other. Naan, roti, paratha and rumali roti come from the tandoor.

Vegetarian plates worth ordering

Paneer tikka and malai broccoli come off the tandoor; dragon paneer, corn cheese balls and gobi manchurian cover the starters; and there are paneer burritos, paneer quesadillas and grilled veg sandwiches for something lighter.
